Salami Chips

Ingredients
- 6 ounce salami (e.g., Charlito's Cocina Campo Seco or Chorizo Seco)
- oil for frying
- mustard or jam for dipping
Instructions
Thinly slice the salami. Cover a large plate with two sheets of paper towel and set aside near the stove. Fill a deep frying pan with 1/4 inch of oil and heat to 350 degrees. Carefully slide the salami slices into the hot oil and cook them until they are crispy but not burnt. Use a slotted spatula to remove the cooked salami slices onto the paper-towel-lined plate. Dab the salami with another piece of paper towel to remove excess oil. Serve as a snack or appetizer along with mustard or jam for dipping and sliced fruit or vegetables for contrast.
