Shaved Fennel and Pear Salad

Ingredients
- 1 fennel bulb, shaved thinly (1/8 inch thick)
- 2 pears, cored and sliced thin (b/w 1/8 and 1/4 inch thick)
- 1 tablespoon fresh herbs, such as parsley, tarragon, chervil and chives, finely chopped
- 1 tablespoon shallots, finely diced
- 1/4 cup white wine vinegar
- 1/2 cup extra virgin olive oil
- salt and freshly cracked pepper to taste
- shaved parmesan or pecorino to garnish (optional)
Instructions
Dressing: Place the vinegar and shallots in a bowl and season with salt and pepper. Let shallots macerate for 10 minutes. Whisk the oil and herbs.
Salad: Simply compose the fennel and pear shavings on a plate and drizzle the vinaigrette over the top. Garnish with shaved parmesan or pecorino.
