Soba Noodle Stir Fry

Ingredients
- 1 roll soba noodles or 1 cup of rice
- 1 cup desired vegetables cut into thin slices (carrots, sweet potatoes, kale, etc.)
- 3 ribs celery, chopped
- 4 mushrooms
- 1 tablespoon olive oil
- 1/2 medium medium onion
- 1 garlic clove
- 1 teaspoon ginger
- 1 tablespoon stir fry sauce
- 1 tablespoon toasted sesame oil
- Tamari-unpasteurized soy sauce to taste
- Salt and pepper to taste
Instructions
Boil soba noodles in water for 5 to 6 minutes then drain and set to the side with a little olive oil. Cut all the vegetables in thin julienne slices. In a pan sautéed the vegetables (start with the hardest vegetables, stir each time and then add the other softer vegetables for 5 to 8 minutes. Then add the garlic and ginger with olive oil, salt and pepper for 3-4 minutes. Add soy sauce, stir fry sauce, and soba noodles for 2-3 minutes. Toss together with sesame oil and salt and pepper and serve hot or room temperature.
