Spinach & Rice Casserole

Ingredients
- 1 cup chopped onion
- 2 cloves minced garlic
- 3 tablespoons butter
- 2 pounds fresh, chopped spinach (or other greens)
- 4 eggs, beaten
- 4 cups cooked brown rice
- 1 cup milk
- 1 1/2 cup cheese, shredded
- 2 tablespoons soy sauce
Instructions
Preheat oven to 350 degrees. Saute Onions and garlic in butter or margarine over medium heat. When onions are soft, add spinach. Cook 2 minutes. Combine all ingredients and mix well. Spread into a well greased casserole dish and cover. Bake for 35 minutes.
