Summery Corn Salad

Ingredients
- 1 clove fresh garlic
- 1 teaspoon kosher salt
- 2 tablespoons balsamic or cider vinegar
- 3 tablespoons extra virgin olive oil
- 1 tablespoon honey or agave nectar
- 1 teaspoon Dijon mustard
- 6 ears corn, shucked and kernels removed
- 3 ripe tomatoes, diced
- 2 ripe peaches
- 1 bunch scallions, sliced
- 1/4 cup basil, minced
- 1/2 pound spinach, roughly chopped
- Black pepper to taste
Instructions
Mince garlic until it is in small pieces. Sprinkle the kosher salt over it and continue to cut and mash it until it resembles a paste. Add the garlic to a large bowl, along with the vinegar, oil, honey/agave and mustard and whisk until combined. Add the remaining ingredients, mix well and serve.How do you #eatdowntoearth?
