Turkish Melemen

Ingredients
- 1 medium onion, sliced
- 1 large very ripe tomato, diced
- 3 hot peppers (or 1 green bell pepper), diced in 1/2 inch cubes
- 3 eggs, slightly beaten
- 2 tablespoons extra virgin olive oil
- Salt and pepper to taste
- Artisanal bread, sliced for serving
Instructions
Heat frying pan to medium high heat. Add olive oil and sauté onions for a couple of minutes until translucent, then add peppers and sauté for a few minutes more. Add tomatoes and cook until they form a sauce with the onions and peppers. Stir in the eggs to bind the sauce, season with salt and pepper.
