Turnip Soup

Ingredients
- 4 cups beef broth
- 3 medium turnips, peeled & cut into chunks
- 1 small onion, chopped
- 2 tablespoons chopped parsley
- salt and freshly ground black pepper to taste
Instructions
1. In a large saucepan, combine beef broth, turnips, and onion and cook until the turnips are soft, about 10 – 15 minutes
2. Stir in the parsley and put the mixture in a blender. Blend until smooth; it will take 2 or 3 batches.
3. Taste and season with salt and pepper. Reheat and serve.
