Veggie Skewers

Ingredients
- Zucchini or summer squash
- 10-12 button or mini portabello mushrooms
- Cherry tomatoes
- Bell Peppers
- 1/3 cup olive oil
- 2 tablespoons wine vinegar
- 1 clove of garlic
- 2 teaspoons fresh thyme or 1/2 teaspoon dried
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Instructions
Cut vegetables into 1" cubes/pieces. Combine the rest of the ingredients in a large bowl and stir, toss in vegetables. Let stand for at least 10 minutes. Soak wooden skewers in warm water for at least 10 minutes. Thread vegetables onto skewers. Grill over medium-high heat for 8-10 minutes, turning and brushing with left over marinade occasionally until browned.
