Watermelon and Arugula Salad

Ingredients
- 1/2 pound arugula leaves
- 2 pounds watermelon, 3/4 inch diced
- 1/3 cup olive oil
- 1/4 cup lemon juice, freshly squeezed
- 1/2 teaspoon coarse salt (optional)
- 1/4 teaspoon freshly ground black pepper
- 1 tablespoon fresh basil, minced
- 5 ounces shredded Parmesan cheese
Instructions
Wash the arugula and place in large bowl with diced watermelon. Sprinkle with Parmesean cheese.
Make the dressing- in a small bowl whisk together the oil, lemon juice, salt (if desired), pepper and basil.
Pour dressing on the arugula and watermelon, toss until the dressing covers salad and serve.How do you #eatdowntoearth?
