Watermelon and Arugula Salad with Ginger

Ingredients
- 2 tablespoons rice vinegar
- 2 1/2 tablespoons canola oil
- 1 1/2 teaspoons ginger, minced
- 1 1/2 teaspoons lemon peel, grated
- 1 small clove garlic, minced
- 2 cups watermelon, cut into 1/2 inch cubes
- 2 cups arugula
- 1/2 large cucumber, peeled, seeded, and sliced into 1/2 inch pieces
- 1/4 cup fresh cilantro, chopped
Instructions
Whisk together vinegar, oil, ginger, lemon peel, and garlic in a small bowl. Season to taste with salt. In a large bowl, combine watermelon, arugula, cucumber, and cilantro. Pour enough salad dressing over to coat and gently toss. Add more dressing if needed.
