Wilted Swiss Chard and Duck Sausage Brushetta

Ingredients
- 2 large bunches of Swiss chard
- 2 tablespoons olive oil
- 3 cloves crushed garlic, chopped
- 1/2 pound grilled duck sausage
- 1 loaf semolina baguette or italian bread
- 1 pint grape tomatoes
- 1 cup grated parmesan
- salt and pepper to taste
Instructions
Remove stems and rough chop chard. Sauté chopped garlic in olive oil. Add chard while garlic is browning. Reduce heat as chard wilts, and cook for 5-10 minute or until tender. Season with salt & pepper. Slice or crumble the grilled duck and add to the chard. Sauté an additional 2 to 3 minutes to allow flavors to meld together.
While chard is cooking, slice bread thinly and either toast lightly or grill. Scoop small portions of the chard and duck mixture onto grilled bread slices. Top with grated Parmesan cheese and a grape tomato half. Serve immediately.Enjoy with an ice-cold Captain Lawrence IPA.
