La Trafila is a Gowanus, Brooklyn based fresh pasta business founded by Jiselle & Luigi Speranza. Jiselle has a business degree as well as certification from The Institute of Culinary Education. She has worked in restaurants, as a recipe developer and as a freelance chef and food stylist. Luigi graduated from Roccaraso Culinary School and has worked in restaurants in Italy, Amsterdam and New York City and consulted for well-known food brands. He competed in the 2019 Northeast Pasta Showdown, a two day event where he scored third place.
Their passion for cooking and creating brought them together from opposite sides of the world. And by combining their skills and experiences they have become a leading manufacturer of fresh pasta for homes and restaurants. They use ingredients imported from Italy as well as local and organic when possible to create handcrafted pasta, stuffed gnocchi, sauces, tiramisu and cannoli.
