Mostly Dough is a mobile pizza and catering company. They specialize in Neo-Neopolitan style pizza using Molino Pasini flour and source local ingredients from farmers markets to make authentic and seasonally driven pizzas.
Mostly Dough hand stretches their mozzarella, makes all of their sauces fresh using local ingredients and prepares their dough using a 24-hour fermentation process which gives their pizzas a uniquely rich flavor and texture. They use a mobile pizza oven that burns wood and gas to cook pizzas at 800+ degrees. Their delicious pizzas are ready in less than two minutes -- hot and steaming, with a chewy, flavorful and crispy crust. In addition to vending at farmers markets, Mostly Dough also does private parties, festivals, corporate events and catering.
