diRiso Risotto Balls started in 2009 as an outdoor food stand at a Westchester County farmers market. It was a side project for Matteo Befi's father, who was raised in South Italy, that allowed him to explore his passion for cooking Italian food. He quickly won fans for his fresh mozzarella, focaccia bread, lasagna and risotto balls. Eventually, Matteo started to assist his father with the business, first by selling at the market, and later on by getting involved with production in the kitchen.
With time, it became clear that the Risotto Balls were their most popular product. Matteo suggested that they change the name of the business to diRiso and focus on a concept surrounding the Risotto Balls. Nearing graduation from Oneonta State University, Matteo decided to expand the business, bringing their menu to more local markets and events while keeping a handmade-scale production in their Tarrytown, NY kitchen.
diRiso strives to create products that stand-out, both in flavor and visual appeal. Their core motivation is to provide outstanding customer experiences, and for this reason they are always looking to improve their product offerings and commitment to exceptional service.
