Corn & Tomato Salsa

Ingredients
- 1 cup diced tomatoes
- 3/4 cup fresh roasted corn
- 1/4 cup diced onions
- 1/4 cup diced cucumber
- 1/4 cup diced peppers or jalapenos
- 1/2 bunch chopped cilantro
- Juice from 1 lime
- Salt & pepper to taste
Instructions
Husk cork, season with salt, pepper & olive oil. Roast on grill for 5 minutes, turning until golden. When cool, shave kernels from cob.
Mix all ingredients in bowl and serve with chips, rice or as a side dish
