Greens and Garlic Salad

Ingredients
- 1 bulb of spring garlic
- mix of salad greens: watercress arugula, mitzuna or a combination
- 2 tablespoons lemon juice
- 1/3 cup olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Instructions
Blanch fresh spring garlic in small pot of water for 3 minutes. Drain and rinse in cold water. Dry on paper towels. Chop into a small dice.
Wash and dry spring greens and break into small pieces. Mix lemon juice, olive oil, salt and pepper add the garlic and pour over greens. Enjoy!
