Sweet Corn Salsa

Ingredients
- 3 large ears of sweet corn
- 1 medium bell pepper cut in half with stems, ribs and seeds removed
- 1 small jalapeno chili
- 1 tablespoon olive oil
- juice of 2 fresh limes or lemons
- honey or brown sugar to taste
- 1/2 cup fresh cilantro or mint leaves
- sea salt and fresh cracked pepper, to taste
Instructions
1. Cut kernels of corn and put in bowl
2. Dice remaining vegetables and add the rest of the ingredients
Let sit for 30 minutes before serving. Makes 2 cups.
