Yelena, the owner of Panini Pie Factory grew up in the Volga River region of Russia in a family with deep, multigenerational baking traditions. After moving to New York in 2001 she invented panini pies - a unique product that combines the baking practices of her great-grandmother with the multiethnic tastes, smells and culinary traditions of NYC, which she has been calling home for the last 20 years.
Panini Pies are vegetable- and meat-filled pies handmade with fresh ingredients, which Yelena is careful to never overprocess. Savory blends of fresh vegetables and spices are wrapped in a thin layer of specially developed dough and baked. The pies are ready to eat but can be refrigerated for up to a week and reheated in a panini press, skillet or toaster (never a microwave!). Proper reheating creates a deliciously crunchy thin crust - the unique feature of panini pies reflected in their name.
