Baba Ganousch

Ingredients
- 3 medium eggplants, approx 2 pounds
- 3 medium cloves garlic, minced
- 2 tablespoons lemon juice, plus more to taste
- 3 tablespoons tahini
- 1/3 cup extra-virgin olive oil
- 1/4 cup fresh parsley leaves, chopped
- Kosher salt
Instructions
Grill eggplant until charred outside and cooked inside. Turning periodically, about 15-20 minutes. Cut eggplant in half and scoop out cooked inside (discard skin), place on a cutting board and finely chop. Mix eggplant with tahini, lemon, garlic, and olive oil. Add salt to taste.
To serve- place baba ganoush on a flat plate, with a well in the center. Drizzle with olive oil, add chopped parsley. Serve with warm pita bread.
