Chimichuri Sauce

Ingredients
- 1 cup fresh Italian parsley (packed)
- 1/2 cup olive oil
- 1/4 cup red wine or apple cider vinegar
- 1 cup fresh cilantro (packed)
- 2 stalks of green garlic or 2 plump cloves of garlic, peeled
- The juice from half a lemon or lime
- 1 teaspoon finely grated lemon zest
- 1 teaspoon salt plus additional to taste
- 3/4 teaspoon dried crushed red pepper
- 1/2 teaspoon ground cumin
Instructions
In the bowl of a food processor fitted with the metal blade, blend all the ingredients together until smooth or chop by hand and combine in a bowl.
Serve as a condiment or slather on grilled meat and fish. This healthy sauce freezes for about 6 months!
