Garlic Scape Hummus

Ingredients
- 1/2 cup garlic scapes, cut 1" pieces
- 2 cups edamame beans, shelled
- 1 lemon, zested and juiced
- 1/2 teaspoon cumin
- 1/2 teaspoon coriander
- 1/4 cup extra virgin olive oil
- 1/2 cup water
- Kosher salt
- Black Pepper, freshly ground
- Optional - 1 tablspoon lemon balms, finely chopped
Instructions
Rinse the beans and set in a glass bowl. Cover with a damp paper towel, and microwave for two minutes. Remove towel and allow to cool.
Place scapes in the bowl of a food processor. Add the cooled edamame, lemon juice, zest, cumin, coriander and 1 teaspoon of salt. Process until you have a thick paste. With the machine running, slowly add the olive oil and then the water until you reach the consistency you like. Taste for seasoning. Add pepper and additional salt as needed and add the chopped lemon balm if desired.
