Grilled Pork Chops With Plums

Ingredients
- 4 tablespoons extra-virgin olive oil
- 1 tablespoon honey
- 4 bone-in pork rib chops (about 1" thick)
- salt and pepper
- 4 medium ripe plums (about 1 lb) halved and pitted
- 1 lemon, halved and de-seeded
- 2 tablespoons fresh oregano leaves, roughly chopped
Instructions
Oil grill grate and heat to medium-high. Combine 2 tablespoons of the olive oil with the honey in a large sealable bag. Pat pork chops dry then season generously with salt and pepper before adding to the oil-honey mixture. Seal the bag, press out the air, and massage the chops to coat them in the mixture.
Toss plums and lemon with the remaining 2 tablespoons of olive oil. Season with salt and pepper.
Grill pork, turning chops occasionally, until a meat thermometer inserted about 1/2 an inch away from the bone registers 130° F (6-8 minutes). Transfer to a cutting board and allow to rest for at least 10 minutes.
Grill the plums and lemon halves until they have grill marks and the plums start to release juice, about 4 minutes. Set aside to cool then cut the plums into wedges, reserving any juices they release.
Cut the pork chops from the bone and slice 1/2 and inch thick. Arrange on plates, top with the plums and their juice, a squeeze of lemon juice, and a sprinkling of oregano and serve.
