Green Spring Mayonnaise

Ingredients
- 1 bunch green garlic
- 1 bunch scallions
- 5 tablespoons olive oil
- 1/2 cup chopped parsley
- 1/2 teaspoon salt
Instructions
Trim green garlic and scallions of roots and any yellowing leaves. Wash well and chop bulbs and green parts into one inch pieces. Place into a food processor fitted with a steel blade along with olive oil and parsley. Process until smooth and mixture begins to thicken. Salt to taste.
This mayonnaise can be used as a sandwich spread, a burger topping, an addition to avocado, or simply as a dip.
Refrigerate and use within the month. Yields about 2 cups.
