Ingredients
- 2 tablespoons vegetable oil
- 2 potatoes
- 2 onions
- 3 bell peppers
- 6 eggs
- Salt and pepper (optional)
Instructions
Heat oil in a frying pan over medium heat. Add potatoes, onion and peppers and cook until vegetables are soft. Pour in eggs and gently stir together. Cover the pan and continue to cook until eggs are firm. Serve hot and enjoy!
