Roasted Fingerling Potatoes

Ingredients
- 2 lbs. fingerling potatoes, cut in half lengthwise
- Olive oil (or duck or bacon fat)
- salt and pepper
- Parsley, hand full chopped
Instructions
Preheat oven to 400 degrees. Place Potatoes on a sheet pan lined with parchment paper. Toss with Olive Oil, Salt and Pepper to coat.
Place Potatoes in oven. Roast until tender and golden. (About 30 minutes.)
When done, toss potatoes with the chopped Parsley and re-season if necessary.
Transfer the Potatoes to a platter and serve.
Optional:
If you cannot find fingerling potatoes…you may substitute any waxy potato. Such as Yukon gold, whites or reds. Cut to the desired size and follow the above procedureHow do you #eatdowntoearth?
